Chia with Barleycup and raspberries

Ingredients:
  • 200ml semi-skimmed cow’s milk or almond milk if you prefer
  • 4 tablespoons chia seeds (40g)
  • 1 tablespoon Barleycup (6g)
  • a pinch of cinnamon
  • a piece of fresh ginger (1cm)
  • 1 tablespoon honey – more can be added according to preferences
  • 2 tablespoons fresh or frozen raspberries (40g)
Method:

1: Heat milk in a small saucepan and when just warm stir in the Barleycup, chia seeds, cinnamon and the ginger.

2: Gently heat the drink for 1-2 minutes before adding the honey.

3: Remove the ginger then leave until cool (during which time the chia seeds may swell slightly). Once cool pour the dessert into serving dishes and top with the raspberries.

Serve at room temperature or slightly chilled.
